Nikkei cuisine was born out of the immigration of Japanese sugarcane farmers to Peru more than 100 years ago. This cuisine evolved out of the blending of these fish-centric food cultures and have recently gained more popularity across Europe, under the passionate hands of chefs like Nobu Matsuhisa and Ferran & Albert Adria.
